Unmarked 10" Chef Knife Forged Carbon Steel Transitional 1960s Solingen Trade in L'Alpage in varnished blue beechwood Size:6 Gou L'Alpage in varnished blue beechwood and stamped with our Bernal Cutlery Logo This cleaver was found with a little sharpening wear and a small amount of rust but overall in great condition Unmarked but certainly made in Solingen transitional 1960s drop forged but not hand forged with the post war handle shape of the 1950s and 60s (round transition from bolster to handle) and with aluminum rivets that began to be used in the 1960s It had been sharpened in enough so that the edge was starting to get thick and it has been thinned and re ground here in the old style leaving a thin convex zone in the 1 3 of edge behind the bolster that comes down to a very small bevel
